Cooking internship

I love Peruvian cooking. It’s a mix of all seven cultures of this country (Creoles, Chinese,..). It’s like poetry!

On Saturdays before lunch I go to see Rosa, our great cooker to learn some new recipes.

She is nice and she cooks very well and for me who is very curious and love discovering different ways of cooking, it’s a wonderful opportunity to learn her way to cook Peruvian food. I have never seen in my life so many different and varied dishes that don’t exist in Italy: colored fruits, strange vegetables, spices and flavors, which taste and smell very different and good.

The first day I learnt the “Ajì con gallina”, a very delicious recipe of chicken with a spicy sauce of yellow pepper. The second one was “Pollo con Mani”, that is chicken with a peanuts and pepperoni’s sauce. And finally I learnt the “Arroz chaufa”, a mixed Chinese rice with meat and vegetables, very special!

Most of the dishes are served with rice and potatoes or eggs and some salads of tomatoes and lemon. For me, how she cooks for so many people and that well stays a mystery. Every time is something unbelievable. During this shared moments we listen to the radio songs of Peru or international pop-rock and we speak about cooking, our countries (Peru and Italy) and life. And at the same moment, I get to spend time with her beautiful children who are playing in the kitchen.
